Candy Cookie Bars

So yesterday I posted that I made some yummy and did I mention EASY cookie bars to take with me to an Alpha Phi  event on Sunday evening. These cookie bars really couldn't be more simple to throw together and in just about 25 minutes you have a yummy homemade dessert.
I have made this recipe multiple times, and it always gets rave reviews. I was sort of bummed that I didn't have any leftovers on Sunday, but I really don't need them and they all went to a good cause-hungry sorority girls! Shaun also really loves these, and I sent him a batch a while back.

Two of the things I love about this recipe is that it makes a huge batch, and you can mix up what kind of candy/chocolate you use. One of my secrets is that I stock up after a holiday on some of the 1/2 price candy. This past time I used candy coated chocolate eggs, and peanut butter chips. The last time when I made them for Shaun, it was right after Valentine's day, and I used Kit Kat bars (chopped up) mini m&m's and mini Reese peanut butter cups! But that is what is great about this recipe is that you can use whatever you like from chocolate chips to candy pieces.



Ingredients: 

2 yellow cake mixes
4 Eggs
2 teaspoons vanilla
10 tablespoons melted butter
4 tablespoons milk (I used skim but use whatever you have on hand)
4 cups of chocolate ( I like to use a mixture, as I had mentioned above, but feel free to use peanut butter chips, toffee chips, chocolate chips, and/or assorted candy)

Directions: 

Preheat your oven to 350 degrees and spray a 11x17 pan with non-stick cooking spray. Combine all of the above ingredients, and spread into the greased pan. It can be pretty sticky, so I usually spray my spatula with cooking spray  and use that to help me spread into the pan. Bake for 25 minutes (don't overcook them, but make sure that they are cooked through), and wait till they are cooled to cut them up and ENJOY!
