Recipe--Panda Express Copycat Sweet Fire Chicken & Football!

So like I mentioned, Shaun is a bit of a sports fan, and by fan, I mean fanatic! He really does love his Philadelphia Eagles, Philadelphia Phillies and the Philadelphia Flyers.  On Wednesday for you non-football folk they released the 2014football schedules for all the NFL teams.  Below is the Eagles schedule, so I know you will want to keep this close to your heart.

 

I was talking with Shaun yesterday on Skype and he asks me about if we already have Thanksgiving plans. My first thought was how sweet, he is already planning ahead for my favorite major holiday, but then came his next statement: At 4:30 on Thanksgiving, I am going to be watching the Eagles/Dallas game!  He also informed me that he will be wearing a jersey that day! Oh Shaun, how silly of me to think you were actually thinking of Thanksgiving, and not football! 

Oh well, we have a few months to plan, and I am sure we can have a great Thanksgiving, and Shaun can watch some Eagles football! 

Now onto one of my favorite things, food, in particular Asian food! I love Asian food, from Chinese to Japanese to Thai and Korean! I even took a Thai cooking class a few weeks ago. I will have to share some of the yummy recipes I learned with you all soon! But I digress...So who out there also loves Asian food? Do I have a very yummy recipe for you today. It is a copycat recipe from Panda Express. Panda Express is a Gourmet Fast Food Chinese Chain Restaurant. They have locations in over 46 states, and use fresh chopped veggies at all of their locations. Their food is great, and since it is so yummy, I was excited to come across a copycat of one of my favorite menu items there: Sweet Fire Chicken

I made the recipe as written except for the following changes:

  • I used splenda sugar when it called for regular sugar
  • I used egg beaters instead of regular eggs
 I thought that the meal came out great with these two changes, and tasted so much like the Sweet Fire Chicken you order at Panda Express. It is sweet but with a touch of heat from the chili flakes. I served this with green beans, white rice, and called it dinner.  Try this out if you are looking for a delicious and not too hard Chinese dish. Even if you have never tried the real Panda Express, you won't be disappointed with this dish!
