I know yesterday I gave you a little taste of the sweet dessert that my family enjoyed for our Easter Lunch. In case you forgot, here it is, Strawberry Shortcake Cale:
Now, I have a confession to make, so get ready! This is the first cake that I have made from scratch! Yes, I have made cakes throughout my life, and one of my favorite desserts is chocolate cake with vanilla icing with rainbow sprinkles of course (my birthday is coming up, hint, hint!) but I always had started with a box mix! The other Saturday morning I was watching my favorite lady, The Pioneer Woman on Food Network, and she made this delicious looking cake using one of my favorite foods: Strawberries!
Pus I have never been disappointed by the Pioneer Woman, and the recipes I have made by her, so I thought what the heck! And this one did not disappoint either!
Here is the recipe for Strawberry Shortcake Cake!
I followed the recipe pretty closely but I did make a few slight changes.
1. I used two 9in. cake pans due to a few other reviews of the recipe. The Pioneer Woman originally called for you to use one 8in cake pan and split the cake in half. Using two worked out well, and I just reduced the original cooking time to 33 minutes, but each oven varies.
2. Also the recipe calls for baking soda but on the TV show she uses baking powder. I went with the baking powder and it worked out fine!
3. I made the amount of icing that the recipe called for, but it was a lot of ICING! I would maybe cut it back by half the next time, because there was a ton of icing. If you like icing, though go ahead and make it all.
4. I also used an immersion blender to mash up the strawberry layer.
The cake is yummy, and I would make it again! I am glad that the first time making from scratch cake turned out so well! Did you all make any yummy Easter treats?
