Happy Cinco De Mayo!!! Yes, yes, I am well aware that Cinco De Mayo was yesterday! I mean how could I forget my second favorite holiday! Okay, I also know that it is not a real holiday, and maybe it is my third favorite holiday. It is up there on my list of favorite holidays, right after Thanksgiving and Christmas. Should I be concerned that all my favorite holidays involve/revolve around food? I hope not, because I am not changing my favorites!


Back in college, Cicno De Mayo was oh so considered a holiday! Our favorite Mexican restaurant, Plaza, even sold shirts! So duh, we had to get them to represent! :) Our love for Plaza started our Freshman year of college. There was a Plaza located right off campus, and us car-less freshman ( we were not allowed to have cars our first semester at school) could walk there. So that second week of school we started to go to Plaza once a week (okay, maybe more!) and the tradition continued on throughout college. It was yummy, cheap and delicious! What more could a college student want? What is even more wonderful is that Shaun also loves Plaza! Since we met while he was stationed in the same town where I went to school, and then we continued to live there for a few years, Shaun, has got to experience the Plaza love! :) I had a pretty low-key celebration yesterday, but I still had some lovely Mexican food with some great people! I hope you celebrated!
